  1. Limpiamos los boquerones quitándole la cabeza las tripas y la espina dejándolos abiertos por la mitad. Cuando los tenemos limpios los ponemos en una fuente y los lavamos bajo el chorro del grifo, moviéndolos con la mano y cambiando el agua constantemente. Esto se hace varias veces (si ves las fotos solo lavandolos mucho quedan casi blancos) cuando están en este punto los pones en un bol con agua con bastante sal (un poco más de lo normal) y los dejas en el frigorífico 1 ó 2 horas
  2. Pasado este tiempo le quitamos el agua, en otro bol los colocamos con la piel abajo quedando la carne arriba, y añadimos vinagre de vino seguimos colocando y cuando están todos los cubrimos con vinagre y los metemos en el frigorífico aproximadamente 1 hora (Miramos de vez en cuando para ver si están blancos). Una vez blancos les escurrimos todo el vinagre añadimos agua y escurrimos otra vez. En un plato ó bandeja que te coja en el congelador le pones un film de plástico y los colocas separado
  3. Cuando llenes la bandeja pones otro plástico y sigues poniendo los boquerones hasta que estén todos, los tapas otra vez con plástico y los congelas durante 2 día (como este pescado se come crudo hay que congelarlo por el anisakis). Transcurrido este tiempo los descongelas, los pones en un bol con un ajo triturado ó cortado en cuadraditos muy pequeños, perejil y bañados en aceite. Los mezclas bien y siempre colocados con la carne hacia arriba y ya están listos para comer
