- 400 gr queso Philadelphia light
- 125 ml yogur vegetal Skyr
- 1 chorro leche semidesnatada
- 4 huevos
- Edulcorante líquido
- 1 sobre levadura Royal
- 2 cucharadas Maizena
- 2 cucharadas harina de avena
- Zumo de 1/2 limón
- 1/2 potecito de esencia de vainilla
- Mermelada de arándanos (casera)

- Precalentar el horno a 180. Mientras se calienta, trituramos en una batidora las galletas Digestive (yo usé unas 3/4 partes del paquete de 400gr, depende del grosor de la base que queráis conseguir).
- Vertemos las galletas trituradas en un bol y le añadimos 2 cucharadas de aceite de coco (derretido en una taza en el microondas) y una cucharada de crema de cacahuete, que le dará un sabor especial. Con las manos o una espátula, vamos removiendo y mezclando hasta conseguir una textura arenosa y húmeda.
- Lo vertemos en un molde desmontable (en mi caso, grande de 26cm) y esparcimos, de forma uniforme y presionando bien con los dedos para que quede bien pegado consiguiendo una base consistente. Recomendable subir un poco la base a las paredes del molde (que podéis engrasar con mantequilla para evitar que se pegue la tarta). Colocar en el horno durante 10 minutos.
- Mientras, prepararemos el relleno de la tarta. Vertemos el queso Quark, el Philadelphia y el yogur Skyr vegetal y empezamos a mezclar. Añadimos ahora la leche y la esencia de vainilla y el zumo de limón. Removemos. Añadimos la levadura y la maizena tamizadas, junto con la harina de avena y seguimos mezclando, suavemente. Añadimos los 4 huevos 1 por 1, evitando que entre demasiado aire. Por último, edulcorante al gusto! (Usé edulcorante líquido, puede ser stevia en polvo).
- Pasados los 10 minutos, sacamos el molde del horno con la base horneada y vertemos encima la mezcla que hemos hecho, que tendrá una textura más líquida que espesa.
- Bajamos temperatura del horno a 170 y metemos nuestro cheesecake a hornear durante unos 50 minutos.
- Pasado este tiempo, apagamos el horno y dejamos enfriar la tarta dentro durante 1 hora, con la puerta medio abierta. Al cabo de 1 hora, colocamos dentro de la nevera durante 2-3 horas más para que cuaje y endurezca bien.
- Después de estas 2-3 horas, sacamos de la nevera, desmoldamos con cuidado, untamos encima la mermelada de arándanos (ver mi receta de mermelada casera) y listo para servir!
